Can I create a proxy API to take data from Zendesk? The data I need is from CHAT. chats served, missed and negative votes

yes, it is possible to do so. If the Zendesk API is an HTTP API, then yes, you can create a Proxy in front of that API. From the point of view of Apigee Edge, Zendesk will be no different than any other API.

If you are wondering how to get started, there is some good foundational training available on an on-demand basis. This will get you started with Apigee Edge, regardless of the API you are using, Zendesk or otherwise.
