Is there any encoding set-up in message processor?

We have elastic search backend , we are access from on-prem and saas APIGEE instance.

In Saas , encoding works fine and i am able to get payload with trademark and registered symbol,

while in on-prem instance , i am getting hiting same elastic search but my payload has ??? instead of trademark symbol .

Is there a place on message processor , where i can set encoding, so that on-prem also supports as Saas instance.
