We have a very high volume API that we use for tracking transactions. I do not see a point of sending such an APIs' analytics to the Apigee analytics. Can we disable sending the analytics at the Proxy or Product or at the environment level so that it is no unnecessarily inundated with this information that we might never use.

No. You can't turn-off analytics. However in a customer managed deployment (on-premises) you can disable at Org level (but not at API proxy, product or environment level)/

I am curious. Is there not a need to track some operational metrics for these API calls?
Why you would like to disable analytics?. Even if you could, you shouldn't. Without analytics you won't have an easy way to understand APIs, Apps and Targets behavir.
This is technically a logging service. So not sure if we want the analytics.
