How to disabled some custom attributes filed in the created app - on edit tab section

which ones? What specifically does your user see today, and what would you like the user to see, instead? Can you be specific?

You can customize the display of the list of apps, and the detail for each app. If you use a theme derived from the apigee responsive theme, then you can do it by specifying your own template here: ~/sites/all/themes/MYTHEME/templates/devconnect/devconnect_developer_apps_list.tpl.php
