Extracting all JSON Payloads using Variables reference

Is it possilbe to use Variables reference to extract a paylod as a variable in a JSON file? My Delievery team have devloped logging API and i would like to expand the error by having the payloads.

I have found that the "request" variable may do this through the documentation.
